We’re always looking for an excuse to have sushi, and that’s why we’re celebrating International Sushi Day! No food is more iconically Japanese than sushi. But, as any vegan or vegetarian knows, there’s only so many cucumber rolls a person can eat!
This #InternationalSushiDay, we want to give love to Sushi Modoki by iina—amazing, all-vegan re-creations of classic sushi rolls and bites. At the hands of vegan innovator iina, a cooking instructor in her native Japan, tomatoes transform into “fatty tuna,” mushrooms into “scallops,” and carrots into “salmon”—with mind-boggling results. Modoki is a Japanese word that means “to mimic,” and Sushi Modoki means authentic vegan sushi that tastes (and looks) just like the real thing!

Veggie Tempura Roll
The rule of thumb for making sushi rolls is to be careful not to use too much rice or filling. When using multiple fillings, assemble them in layers. This will show the beautiful layers when the roll is cut into pieces.
INGREDIENTS
Makes 1 roll
TEMPURA BATTER
- 1/3 cup plus 1 tablespoon all-purpose flour
- 1/3 cup ice water
- ½ teaspoon vinegar
- ¼ teaspoon salt
VEGGIE TEMPURA
- 3 ounces green beans
- 1/3 cup corn kernels
- 1 teaspoon all-purpose flour
- Canola oil
MAKI
- One 8 × 7-inch nori sheet
- ¾ cup Basic Sushi Rice
- Daikon Sauce, optional
DIRECTIONS
- To make the Tempura Batter, combine all the ingredients in a medium bowl and mix well.
- To make the Veggie Tempura, combine the green beans and corn with the flour. Pour the batter over them.
- Heat as much canola oil as you’d like for frying the vegetables in a frying pan over high heat to 350°F. Add the battered vegetables and fry until golden brown.
- Assemble the futomaki with the rice, using the Veggie Tempura as the filling. Serve with Daikon Sauce, if desired.
