On Thursday, April 10th our friends at Hockessin Book Shelf gathered for some of our favorite veggie dishes featured in Vedge at another of their monthly Cookbook Clubs. The sold out event was held at Coverdale Farms in Greenville, Delaware, a stunning nature preserve that focuses on a “farm-to-fork” model of sustainable, community agriculture. The cookbook-clubbers tried their hands at a few of the one hundred all-vegetable recipes in Rich Landau and Kate Jacoby’s Vedge, including Zucchini with Pesto Trapanese, Celery Root Fritters and Remoulade, Royal Trumpet Mushroom BLT with Basil Mayo, and Korean Eggplant Tacos with Kimchi Mayo. We’re thrilled to have worked with everyone at Hockessin Book Shelf to make the night such a smashing success.
